RECIPE: Boozy Wild Berry Liquor

Here’s our recipe for making your own boozy wild berry liquor.  This liquor can be enjoyed on its own or in the most amazing warming Winter brews & bakes. If you’ve collected lots of berries, then make a big batch & bottle as homemade Christmas prezzies.

What you’ll need:

  • Foraged wild berries (then frozen in advance): Haws, Rosehips, Sloes &/or Blackberries
  • Sugar
  • Spirit of choice:- Vodka, Brandy, Gin or Whiskey
  • Empty glass bottle with top
  • Funnel

What to do:

  1. Make sure you’re 100% certain that you’ve correctly identified your wild berries. Do a tolerant test if trying something for the first time & when foraging always follow these sustainable foraging guidelines.
  2. Decide how sweet you’d like your liquor!  For reduced sugar, aim for a 1inch layer of sugar, for a sweeter smoother liquor add a 2-3 inch layer. You can of course add a little more or less depending on your taste.  Use the funnel to pour the sugar into the empty bottle.
  3. Next, fill the bottle with frozen berries, can go right to the top depending on how many you have.  Freezing the berries beforehand helps burst the skins & makes for a better infusion.
  4. Finally top up with bottle with your spirit of choice.  We prefer vodka as you get the flavour of the berries rather than the spirit on aswell.
  5. Cap the bottle firmly & then shake & turn to start dissolving the sugar.  Shake the bottle weekly for 4 weeks & then taste.  If you’d like it sweeter, add more sugar & leave for another 2 weeks.  If you’d like to gift your liquoir, then strain through a fine sieve & re-bottle, otherwise you can pour it straight from the bottle keeping the berries!

Serving Ideas:  

  • AFTER DINNER DRINK: Pudding in a glass!
  • WARMING BREW: Think a hot whiskey with a berry twist.  Add a shot or two to a mug, a spoon of honey & then top up with hot water.  The ultimate Winter warmer!
  • DRIZZLE: Onto the fruity layer of a crumble before topping & baking OR over plain sponges & cupcakes straight from the oven for an extra treats for the adults!
