RECIPE: Citrus & Rose Cake

…with Summer berries & blooms!

I came up with this cake as I usually do my recipes – a few hours before I’m going to be serving based on what’s ripe for harvesting from the gardens & surrounding landscape. After a busy few weeks, I’ve kept missing harvesting many of our stunning scented roses so knew rose would be on the ingredients list as well as the glut of loganberries in the kitchen garden! Ever a fan of rescuing food, my mum had dropped over a basket of grapefruit nearing the end of their useable life which were calling to be baked into a cake & so this recipe was born! The Citrus & Rose cake is a also entirely plant based.

GATHER for the botanical preserve..

  • 30g flavourful edible botanical – Rose (as used here – the more fragrant the better) but Fennel & Mint also work really well.
  • 90g caster sugar
  • 1tbsp citrus juice (I used Japanese quince juice instead)


  1. Preheat oven to 180 deg C (fan oven). Grease & line an 8 or 9 inch springform tin with baking paper.
  2. In a large mixing bowl whisk together all the wet cake ingredients.
  3. In another bowl sift together all the dry cake ingredients. Then slowly pour the wet into to dry & mix until you have a smooth batter.
  4. Pour the batter into the prepped tin & then bake for 45-60 mins until a skewer comes out clean when inserted into the middle of the cake.
  5. Remove from the oven and let cool to room temperature.
  6. To make the botanical preserve it’s as simple as adding all of the ingredients to a small food processor or blending jug & blitzing until it’s combined to form a smooth paste. Use it straight away or keep up for up to 3 months in a sealed jar in the fridge. What’s wonderful with this raw preserve is that none of the colour or flavour of your chosen plant is lost in cooking but still preserved in the sugar base.
  7. To assemble: pop the cake on a serving plate, spread with a generous layer of your chosen botanical preserve & then crown with a heap of fresh berries & edible blooms – whatever’s in season in your garden or local market!
